&lt;p&gt;I hope you all had an enjoyable Mother’s Day! Whether you have children or not, or are are a dog mom like me, it’s a great day to honor all nurturing female beings - human &amp; non-human alike.&lt;/p&gt;
&lt;p&gt;I am so lucky to come from a strong line of women &amp; spent the day honoring my Mom &amp; Grandmother at our mountain getaway in Julian, CA. We decided to beat the brunch crowd (besides there really isn’t much aside from a fruit cup on the menus in this country town!) &amp; make brunch ourselves. I thought about making this &lt;a href="http://vegenista.com/post/48010490069/vegan-mixed-berry-coconut-coffee-cake-when-the"&gt;splendid coffee cake creation&lt;/a&gt; again, &amp; we also considered trying to veganize a baked French toast recipe we’d made in the past but didn’t want to fuss with the trial &amp; error of veganizing something unfamiliar. Then I remembered this &lt;em&gt;&lt;strong&gt;&lt;a href="http://keepinitkind.com/baked-coffee-cake-french-toast/"&gt;“Baked Coffee Cake French Toast”&lt;/a&gt;&lt;/strong&gt;&lt;/em&gt; from &lt;a href="http://keepinitkind.com"&gt;&lt;em&gt;&lt;strong&gt;Keepin’ It Kind&lt;/strong&gt;&lt;/em&gt;&lt;/a&gt;. Why try to decide between the two when you can have both?This was the perfect solution &amp; everyone at the table loved it - vegan or not! We served it with warm maple syrup &amp; &lt;a href="http://www.earthbalancenatural.com/product/organic-coconut-butter/"&gt;coconut spread&lt;/a&gt;, alongside greens with an apricot vinaigrette, &amp; fresh fruit salad for a wonderful homemade Mother’s Day Brunch Feast!&lt;/p&gt;

&lt;p&gt;a.k.a. &lt;strong&gt;vegan, no-bake (rather healthy) snickers truffles&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;br/&gt;&lt;/strong&gt;Snickers are the only chocolate-bars I kinda miss, but I think these are an adequate substitute. And there’s only 4 ingredients in them!&lt;/p&gt;
&lt;p&gt;for about 10-12 truffles you’ll need roughly&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1/2 cup dates&lt;/li&gt;
&lt;li&gt;3/4 roasted, unsalted peanuts&lt;/li&gt;
&lt;li&gt;a pinch of salt&lt;/li&gt;
&lt;li&gt;&lt;span&gt; 2-3oz dark chocolate&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Blend the dates and about half of the peanuts and the salt in a food processor until you have a sticky mass. Knead in the rest of the peanuts and form little balls. Melt the chocolate (I did that in the microwave), roll your balls in the chocolate and let it dry. &lt;/p&gt;

&lt;p&gt;I make these too, but I use milk chocolate or even white chocolate (yes, dark chocolate is healthier, but a small amount is fine. remember moderation is key) you can try yogurt too and freeze it. try adding almonds, cashews, granola, fruits, anything! :) experiment! even protein powder, and you can blend some strawberries with the protein powder with almonds :) &lt;/p&gt;

&lt;p&gt;2 bananas&lt;/p&gt;
&lt;p&gt;1/3 cup almond butter&lt;/p&gt;
&lt;p&gt;½ tsp vanilla&lt;/p&gt;
&lt;p&gt;¼ tsp cinnamon&lt;/p&gt;
&lt;p&gt;1/3 cup all natural dark chocolate pieces or chips (at least 60% cacao)&lt;/p&gt;
&lt;p&gt;1 T coconut oil&lt;/p&gt;
&lt;p&gt;popsicle sticks or bamboo skewers&lt;/p&gt;
&lt;p&gt;DIRECTIONS:&lt;/p&gt;
&lt;p&gt;Mix almond butter, vanilla, and cinnamon together until well mixed.&lt;/p&gt;
&lt;p&gt;Peel and cut bananas in half. Slice the halves vertically in half.&lt;/p&gt;
&lt;p&gt;Divide your almond butter mixture into 4 equal portions. Use 1 portion of almond butter per 2 banana slices. Spread the almond butter mixture over half of the banana slices.&lt;/p&gt;
&lt;p&gt;Press your popsicle stick or skewer on top of the almond butter and top with the remaining banana slices.&lt;/p&gt;
&lt;p&gt;Place the banana pops in the freezer and freeze until firm.&lt;/p&gt;
&lt;p&gt;When your banana pops are all the way frozen, melt your dark chocolate and coconut oil in a double boiler over low heat. (If you don’t have a double boiler, use a large skillet filled with some water and place a smaller pot inside the skillet on top of the water. Put your chocolate and oil in the smaller pot.) Stir until melted and smooth.&lt;/p&gt;
&lt;p&gt;Dip each banana pop in the dark chocolate and place on parchment paper. Place back in the freezer for a few minutes until chocolate is hardened and cold. &lt;/p&gt;

&lt;ul&gt;&lt;li&gt;one block of extra firm tofu, diced and marinated for at least 1 day (i marinate mine in soy, sriracha, and minced garlic for 2 days)&lt;/li&gt;
&lt;li&gt;one package of precooked rice noodles (any kind of noodle is fine- udon, ramen, even plain rice would be good in this)&lt;/li&gt;
&lt;li&gt;tj’s Soyaki marinade sauce&lt;/li&gt;
&lt;li&gt;four medium heads of broccoli, chopped&lt;/li&gt;
&lt;li&gt;one carrot, julienned&lt;/li&gt;
&lt;li&gt;one package bok choy, with the ends trimmed&lt;/li&gt;
&lt;li&gt;some olive oil + several cloves of minced garlic for sauteing &lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Spread marinated tofu on a baking sheet and bake at 350* for an hour+ until nicely browned. While baking, heat a 3-4 tbsps of olive oil in a pan with 3 tsp minced garlic for a minute. Saute broccoli and carrots for about 10 minutes, or until cooked, stirring frequently. Pour ~1/2 cup teriyaki sauce on veggies, toss, and let simmer on low. In a separate pan, saute 1 tbsp olive oil and 1 tsp garlic on medium heat. Add bok choy and coat, then add 2 tbsp hot water and cover/steam for 2-3 minutes until bright green. Put bok choy with broccoli mixture and stir, leaving on low. In the same pan the bok choy was in, warm up your noodles/rice and drizzle with teriyaki marinade. Mix and serve immediately with sriracha! This is so delicious!&lt;/p&gt;
