Vegan Baked Coffee Cake French Toast
I hope you all had an enjoyable Mother’s Day! Whether you have children or not, or are are a dog mom like me, it’s a great day to honor all nurturing female beings - human & non-human alike.
I am so lucky to come from a strong line of women & spent the day honoring my Mom & Grandmother at our mountain getaway in Julian, CA. We decided to beat the brunch crowd (besides there really isn’t much aside from a fruit cup on the menus in this country town!) & make brunch ourselves. I thought about making this splendid coffee cake creation again, & we also considered trying to veganize a baked French toast recipe we’d made in the past but didn’t want to fuss with the trial & error of veganizing something unfamiliar. Then I remembered this “Baked Coffee Cake French Toast” from Keepin’ It Kind. Why try to decide between the two when you can have both?This was the perfect solution & everyone at the table loved it - vegan or not! We served it with warm maple syrup & coconut spread, alongside greens with an apricot vinaigrette, & fresh fruit salad for a wonderful homemade Mother’s Day Brunch Feast!

Mango Cheesecake Smoothie/Smoothie bowl.
Definitely the best thing I’ve made yet. 6 bananas, 4 ataulfo mangoes, 2 medjool dates, 1 vanilla bean, and cinnamon. For the smoothie bowl I used frozen bananas and added date caramel and that is 100% how I would recommend anyone else eat this- it was SO GOOD and seriously tastes like cheesecake to me.

I CREATED SOMETHING BEAUTIFUL
a.k.a. vegan, no-bake (rather healthy) snickers truffles
Snickers are the only chocolate-bars I kinda miss, but I think these are an adequate substitute. And there’s only 4 ingredients in them!for about 10-12 truffles you’ll need roughly
- 1/2 cup dates
- 3/4 roasted, unsalted peanuts
- a pinch of salt
- 2-3oz dark chocolate
Blend the dates and about half of the peanuts and the salt in a food processor until you have a sticky mass. Knead in the rest of the peanuts and form little balls. Melt the chocolate (I did that in the microwave), roll your balls in the chocolate and let it dry.

I make these too, but I use milk chocolate or even white chocolate (yes, dark chocolate is healthier, but a small amount is fine. remember moderation is key) you can try yogurt too and freeze it. try adding almonds, cashews, granola, fruits, anything! :) experiment! even protein powder, and you can blend some strawberries with the protein powder with almonds :)
